I gave brining a shot on some boneless, skinless chicken breasts and I have to say that I don't know what took me so long to try it. This was some of the juiciest, most flavorful chicken I have ever taken off of the grill. I grilled this chicken up specifically for quesadillas. I always grill up 7 or 8 lbs at a time and freeze the leftovers for quick meals. If you haven't tried brining, give it a shot. You will be impressed! Smile

3 quarts of water
1 cup sugar (I used splenda)
1 cup Kosher or Sea Salt
1 cup of your favorite bbq rub (I used Sucklebuster's Competition Blend)
Added chicken breasts and refrigerated 12 hours.

Cooked indirectly on the grill at about 375 degrees until internal temp in thickest part of the breast reached 165.
