I've only done one other fattie. All beef and so so results. I've always wanted to do a breakfast fattie so Sat I figured it was time.
Started with2 lbs. mild Italian sausage and a bunch of other stuff.


It was a beauty day for a change so I fried the onions ,jalapenos and galic out side on the gasser.

Red pepper was roasted and diced as was the ham.

Fried an omelet with the goodies.

Add the omelet to the sausage.

Add some cheddar.

Add the bacon weave and a healthy slug of pork rub.

I used about 1/2 a basket of lump with 2 blocks of cherry for smoke.

About 2 hrs in with an internal temp of 168.

I wrapped it and toweled it for about 30 min.

Massive smoke ring . Very tender and juicy.


We toasted some English muffins with a bit of Apple butter bbq sauce on 1 side and a Mayo spicy ketchup sauce on the other.

Turned out really good. 'cept I've got leftovers from hell. Had it fer lunch Mon and Tues as did the daughter and still a whack in the freezer. Oh well.

Massive smoke ring indeed. For a second there I thought it was raw. Nice job. Nice smokey deliciousness.

Sparks the fattie looked awesome as is, but when you threw in the english muffins? That capped it off. Very Happy

Thanks for the kind words gents. Italian skewer. Toasted E muffins are the bomb. These are whole wheat and as I said if you add a sauce of some kind it kinda loosen things up a bit and adds another layer of flavor.
