While thumbing through my freezer, I stumbled upon some hickory smoked pasta dough I had previously vacuum sealed and frozen, along with some chicken italian sausages. So I figured a pasta dish was in order.
The chicken italian sausages were coated with EVOO and some Big Ron's rub:
I threw them on the smoker (using hickory) along with some roma tomatoes:
I crushed the smoked tomatoes and cooked them down in a marinara sauce:
The sausages were ground up and added to the sauce:
The manicotti filling was made with Ricotta cheese, hickory smoked mozzarella cheese, parmesean and romano cheese, sea salt, cracked black pepper, and crushed garlic:
I rolled out the dough for the manicotti, cut it up into squares, and boiled the dough in salted water:
I prepped the manicotti, using half of the meat sauce on the bottom:
Then I topped off the pasta with the remaining meat sauce and some parmesean cheese:
The pasta was tossed on the smoker for 1.5 hours:
Dinner was served:
I figured a nice ricotta based Italian dessert was in order. While smoking the sausages and tomatoes, I tossed on a Ghirardelli chocolate bar:
One pound of ricotta cheese was drained and whipped, then 1/2 cup of powdered sugar and 2 tsp of vanilla was beat in:
Once the chocolate was cool, I grated some of it into the ricotta mixture:
I whipped up the dough for the cannoli shells:
After a 2 hr rest in the fridge, I used the pasta machine to roll it out and cut out 4 inch circles:
I wrapped the dough around cannoli forms and deep fried them:
Desert is served:
The smoked manicotti was absolutely delicious--but the cannolis were simply devine. Good eats. |

The pasta looks great smokin'gal, I like the idea of smoking the tomatoes I am not real big on desserts but I would put a hurtin on those cannolis, well done  _________________ "Everything in moderation, including moderation"

I love manicotti, but I don't believe I have ever had it smoked. I can imagine the depth of flavor that some good hickory would add to the party. And the cannolis? Well, that's just not fair.

Smoked pasta is more than heavenly, but the cannolis....well, I think I might just whip up another batch and eat them for dinner tonight, lol.  |

Mamma mia !!!!! when are you opening the Trattoria.....
Cannoli ... are yummy my great aunt was an excellent pastry chef she would make her own fresh ricotta cheese and those cannoli were outstanding...

I haven't had cannolis since rooming with a italian in college...mmmmmm...brings back memories
