It's been awhile since I have done a brisket,I pulled one from the freezer the other night and let it thaw.I trimmed about 3 pound of fat off a 12 pound packer,I wanted to do a simple rub and mop.So I said what would Dr.BBQ do.......









I wrapped it in plastic wrap and in the fridge over night.



I put together a mop.





I cooked it at 230-250 degrees for 11 hours with blocks of cherry for smoke.It was a nice day out....48 degrees F,nice day for a cigar. Very Happy



Brisket after about 5 hours.



I did not open the lid for 4 hours,after that I mopped every hour.

All done and sliced,I saved the liquid from the foil which I used in the brown gravy for a flavor boost and some drizzled on the sliced brisket.I had some boiled taters,beans from last years garden and pickled peppers from last years crop,all in all, I was very pleased,brisket was very tender and moist.













I left out a few slices of brisket before I vac sealed the leftovers up fo freeze.I had some fried eggs and brisket for brunch,mmm good.

Nice CB real nice. Sounds like an enjoyable day my friend. It was a freak day in the 70s here! Back to cold tomorrow. So I enjoyed several see-gars out on the deck with the smoker fired up. Nice brisket indeed.

Hey buddy, i just got your message on my phone. I thought i lost my phone yesterday, while all along it was in my truck that's why i didn't answer you back, sorry pal. Now for more important things. Yup it was a gorgeous day today. Brisket looks like it came out amazing, good stuff. I'm sure the windy conditions today made it a little easy to control your temps. Still nursing my neck and can't wait to get going again. Looking at 2 weeks before i even start rehab. Talk to ya later buddy.

It all looks good CB.. save for that crappy beer you was drinking..

How was the rub, that's a lot of salt that my wife would never allow me to use, even on a big piece of meat like that.
