MacEggs BBQ Super Pro

Boiled and peeled 10 dozen eggs yesterday.
I tried something a little different with the brine.
I did my standard 2:1 pickling vinegar to water ratio.
However I did not add salt and sugar to the liquid.
I figured the salt in the steak seasoning will be enough.
"Steak N'Eggs"

In 2011 I grew some Scotch Bonnet peppers for the first time.
I guess I got a little lucky, as this is what I harvested.
I wasn't sure what to do with all of these.
I made a few ADTs and then pickled the rest.
After 4 months. Two 1 litre jars with my standard brine.
I really love a good hot pickled egg.
However, this time I wanted to use just the brine from the pickled peppers.
Poured both jars into a sauce pan and brought to a gentle boil for 5 mins.
Strained the peppers and mashed them a bit.
I strained them 3 more times and got 1½ quarts of liquid.
Put this back onto the stove and heated up to a low boil.
Prior to doing all of that, I boiled and peeled 4 dozen small eggs.
All of them in the pot ready to boil.
20 minutes or so in the ice bath.
I was very happy with the outcome. What I would consider, only 4 bad peels.
Both of these jars are 1.5 Litre. I put 23 eggs in each.
The amount of brine worked out to be perfect for this amount.
I was very happy with that. I won't open these until the summer maybe.
They should be packed with heat by then.
There is still some pepper residue in the jars.
Once they have cooled, I will tumble the jars from time to time.
Doing this helps mix up the flavours and any sediment.
The vapors coming off of the boiling peppers were wicked.

MacEggs...I bet those eggs will have an awesome bite to them come this summer when you try them.....is there a reason you picked them before they were fully ripe or did you run out of growing season.Would have been nice to leave a few slices of ripe pepper in the jars of eggs as well. _________________ Horizon Offset (Marshall RD Special)

I totally envy the peppers that you grow, CB!
There were about 7-8 ripe ones. I had to pick them, as it was mid October.
Very cool nights - almost freezing. Didn't want to chance it any longer.
I want to start the seeds earlier this year with one of those heat mats (what are they called exactly - I forget )
I eventually planted the plants in the ground and used a lot of Miracle Grow. That stuff is awesome!

MacEggs....I figured where you live...your growing season is shorted by at lest a few weeks...even though your only 50-60 miles north of me.Pick up a heat accelerator mat or a heating pad.....Im starting the germination process in one week.  _________________ Horizon Offset (Marshall RD Special)

We are always cooler up here in the GBA then down your way and I think you benefit from Lake Ontario more than we do from Lake Simcoe.
I am saving up some pails for Mark at the deli. Not that I care to partake of what they will produce.

Last year I used a window sill starter. Potential for 24 pellets (2 X 12).
With a heating pad, is it better to use a starter kit that is more "square" in shape, to make full use of the heat?
I hope to start them in early March when I return from my trip.

Thanks Roxy! I knew you wouldn't forget.
You will have to try at least one of those eggs when they're ready.
BTW, I'm Jonesin' for a B8's sandwich. Won't be til March when I get up there.

Yep, pretty darn good. I think there is a bit more of the flavour in that second batch.

MacEggs , next year you can dig the plants up and put them in buckets and bring inside. I had a habanero live for 2 years. During the winter the leaves will fall off and look like a stick but, they will come back the next spring. I would like to give that a try.
As you would expect, it is very cold here in the winter compared to NC.
During the winter, I keep the programmable thermostat for the furnace set at 68° for a high, and it goes down to 63° at night for sleeping. I do this from about mid to late October to some time in April.
Would the plant be able to hold up with temperatures like that for an extended period? _________________ "If the women don't find you handsome, they should at least find you handy."

MacEggs I finally gave in a pickled 4 dozen eggs last night. Your process of boiling and pealing the eggs worked great. The measurements were right on too. The hardest thing about this process is 2-4 week wait period. I tried the steak and eggs. Thanks for the info YODQ4U.. |

I'm glad everything worked out for you, YODQ4U! You're welcome.
The waiting is tough. Once you get making them .... then tasting them, you will not want to run out of them ..... ever!
I suggest after the 2-4 week waiting period, make some more.
Once others get a taste of the steak n'eggs, they'll come back for more.
I have had people who've never even tried a pickled egg try the steak n'eggs, and say "Wow, that's a good ____ing egg!"
When I first posted this thread, I stated:
DO NOT USE FRESH EGGS. USE ONES THAT HAVE BEEN IN THE FRIDGE FOR 12-16 DAYS
I have now found that that is not as important. What is important is:
1) Removing the eggs from fridge and letting sit at room temp for 1½-2 hours
2) Piercing the eggs prior to boiling them and

And thank you to SoEzzy for allowing this to happen. It's a little unexpected.
I have taken/borrowed/stolen so much from The Smoke Ring and all of its great members.
Giving back as best I can just seems like the right thing to do.
I have always been fond of the saying:
"Give a man a fish, feed him for a day.
Teach a man to fish, feed him for a lifetime"
This expression can be applied to most things,
but when it comes to food and BBQ, it's right on!
