Couple beginner questions

So, I am looking at getting this smoker...



In the firebox there is a grate at the top, what is that for?
Is there an easier way to clean out the ash at the bottom of the firebox other than scooping it all out each time?
There is a small hole in the bottom left of the cooking chamber, is that for grease drainage or something else?
Are tuning plates a necessity? do you weld 1" channel and place them loosely on that, or weld the plates too?

You can contour a piece of sheet metal to follow the curve of the firebox and pry it out to dump the ashes. It'll help protect the bottom of the firebox also. I have a small wisk broom and pan dedicated for getting out whatever is left.

Yep, it's a grease drain. You'll have to hook a can under there to catch the drippings. Make sure the cooker is tilted so that the grease will run towards the drain.

They will probably give you better control over your side to side temperatures after you get them in the right place. I'm not an expert on those but perhaps somebody else will make a better commentary.

The cooker looks nice. Looking forward to seeing some pictures of your cooks.

1 for grillling

2 I take it there is not a door on the side of the fire box - A shop vac works if you know the coals are out.

3 grease drain

4 You could use 1/2 angle or even some rod, it just needs to be able to hold the plates up, in fact you could probably go with out rails at all. Do not weld the plates in, the ability to move them lets you create different set ups.

Thanks for the responses. There is a side door on the firebox, I thought there was still a lip though where you couldn't just sweep the ash out. I can't remember exactly though, so I could be wrong. I like the piece of metal idea too though to lessen rusting.

Another question, what is the best way to season the smoker from brand new to ready to cook in. I've heard just pam all over the inside? Just run a fire w/ that for a few hours? Something else?
