You now have my attention!
Love me some smoked meatloaf! The wife isn't real crazy about it, but the boys and I do one now and then when we have other items on the smoker for a long cook.
Here's what we use...
2 raw eggs
2/3 cup milk
2 double handfuls of Dorito's nacho cheese chips
1 chopped onion
Shredded cheddar cheese (up to you as to how cheesy you want it!)
1 teaspoon salt
1/4 teaspoon of fresh ground black pepper
Minced garlic per your taste, we like about 4 cloves
2 pounds ground beef
4-6 boiled eggs
Ketchup as needed per taste
Now here's what we do!
Mix the meat, crushed Doritos, chopped (not minced) onion, SOME cheese, salt, pepper, eggs (these are raw, not boiled), garlic, and milk. Get your hands in and mix really well!
SPLIT the mixture in half. Place half of the mixture into a standard loaf pan and reserve the other half to use in a bit.
With the first half pressed into the bottom of the pan, make a "groove" in the top of the meat and place the PEELED boiled eggs end to end from one end of the pan to the other.
Then spinkle cheese per your preference over the top of the eggs and meat.
Now it's time to add the rest of the meat. Press the remaining meat into the pan very well so that no voids can be between the 2 layers.
Put the remaining cheese (or more if you want) on top of the meat, and then add a THIN coating of ketchup on top of the meat and cheese.
Put in the smoker and let it go until you get an internal temp of 160° or a bit over. I generally put the loaf at the "hot" end of the cooker where the temp runs around 250+.
Once you reach temp, pull it off and let it sit COVERED for about 15 minutes. Flip the loaf pan over and do one of the following:
Slice as you wish, or put a mixture of cheese and ketchup on the top and then slice.
Each piece should have a "target" looking piece of boiled egg in it, and the flavor should be pretty darn good!
