We had a great time this weekend in Covington Ga. The Sherman’s last burning. I met a lot of nice people. Met a team called Uncle Chet’s BBQ. They were very nice and they had some very nice ribs. Very Happy Had a chance to talk to a lot of teams about their smokers what they liked and what they didn’t. Got some great ideas for my smoker. The only bad thing I can think of was the powers to be wouldn’t let the cookers sell any of their Q. UUUUUUUUUUUUUUGGGGGGGGGGGGG. Evil or Very Mad But other than that great time!!!!!!!!!

That'd amount to torture, being around all the aromas of the various meats smoking to perfection and not being able to get a bite. the ground would probably be covered with drool

Yeah I think that I was pulling pork on saturday when someone walked by and asked to snap a picture for the smokering...of course I was elbow deep in pork and turn in times so I just said yes and went back to business...didnt get a name or anything...

and my camera was acting funny so I didnt really get any pictures from covington either...

My chicken brined to long and didnt cook as hot as I wanted...

My ribs werent cooked long enough and just not quite tender enough...

Pork was a little flavorless and I didnt excersize the same care when selecting the meat for the box...which was caused by my chicken taking a little longer than I wanted and things being generally rushed towards the end...

I'll get them next time though...I know what went wrong and I know what I can do to fix it..I am not worry about it at all...

Dawg...benn there, done that, got the scoresheet to remind me of it. Looks like you have the right mindset now, and it will certainly pay dividends in the long run. I was there where you are in April and the rest of the year speaks for itself.

If form holds true, maybe 2007 will be the breakout year for New South.

Ditto on the candor/refelction, Dawg... A whole lot easier to brag when we do well... A whole lot harder to say "We sucked"... But based on your comments, I'd say your head is pretty well squared away - you realize where to focus - and with that kind of attitude/approach to this, you are already a "champ" - and the calls and trophys will be following soon I would bet... Cool

Yea I was asking people if I could take some pics, so I could post them but, we just sold our house so I'm useing the computer from work. Sad But as soon as we get in our new house I'll post them all. Got some great pics of smokers too. Cool

Definitely respect the candor Dawg............good luck next time. As much as I had no intention of trying it, it looks like a buddy and i will have to try at least 1 of the VA / NC comps next year............and god knows we won't be very good, lol.

probably be better than you think...yeah looks like my friends are going to be the lucky ones next weekend...I plan on doing a couple of butts and some chicken to practice for the next comp and try and work some things out...it also happens to be the WLOCP so everyone will get some good grub...

I was actually comparing scores from covington and dillard and I think that it gave me a idea of where I need to be heading...

LOL....not so sure about that, but thanks. I really had no intentions of doing it for a while, but frankly listening/reading about all the fun y'all are having kinda spurred me a bit forward. After doing the little church rib cook-off last weekend I kind of feel the need to at least give 1 or 2 real tries next year.......

I am thinking that the fact that you have an idea about where you want/need to go is going to get you there quick...........I would love to be doing some cooking this weekend but I will be taking my 6 year old to the Disney Princesses on Ice on Saturday and then I think we are taking both kids to Kings Dominion for Fright Fest on Sunday...............
