Let's take a ride in the Smokie's wayback machine.
Remember "Mr. 50?" Nice guy, Kanat who is Bakit of the Bakitles' son has, after about a six month hiatus from the bbq, returned with a vengeance.
He's been in three or four times over the past couple weeks and he always wants brisket, or at least beef.
Well, he's been on a brisket tear, and last night he brought in about eight friends.
Holy cow, they immediately ordered two liters of Absolut to wash down all that brisket and potato skins.
Well, as the evening wore on, another of our friends, "Chingiz of the Hoegaarden" comes in with a couple friends and really attack the Chivas and chicken burritos. i
These two groups each represent important city and government offices from as far as I can tell and have been told, and now they're sitting on opposite sides of the bar (remember we have a round bar in the middle of a round dining hall.)
Well, all was going fine until both groups really got into the bottles. This was about 130am and Mrs. JAllen and I were both hanging out to see how the evening (morning) would finish.
Well, it finished at about two, with a lot of happy bodies leaving the bbq.
And "Mr. 50's" nickname is now "Mr. 60."
Y'all can guess why.
I almost broke the bell.

Well, ending the week I can say we sold some bbq.
Last night was a record night for nights that weren't rented out.
Bunch of embassy, expat and local hot shots doing some eating and drinking.
A lady from the Canadian embassy had part of her birthday party in the J-Lo room, and then headed out to a karaoke place. I asked if we could crash the karaoke party as they were leaving.
The place was huge, and when Mrs. JAllen entered the room with the party, it was downright scary the singing was so bad.
I don't think all the beer in the city could have made most of that stuff sound good, but at least we all had a good time.
We got some beef ribs as we're out of brisket, and plan to fire them up on Tuesday. _________________ Reverse flow Sterno can

Well, haven't been posting much lately as we've been busier than expected. Business is growing and we seem to have successfully managed the most recent price change.
Hopefully, we can keep prices where they are for the balance of the year.
The beef ribs we did yesterday were just awesome. A bit fatty, but great.
I've also been busy unsuccessfully calling in part of an overdue personal loan made to family. As a result, I've been disowned, hung-up on, and called some very creative, very nasty words.
Sometimes that's the result of trying to be kind.
Anyway, moving back to BBQ:
We made a bunch of bbq yesterday and sold a bunch. Someone said the rub was a bit too salty, but when they poured bbq sauce on it, things evened out.

I feel ya'. I've made a personal decision that anytime someone asks to "borrow" money (friend or family), I treat it in my head like a gift and am just pleasantly surprised if it comes back. No matter what you say when you hand it over, no matter how many promises of repayment are made, that's the way they are going to think about it. Once they are on their feet, they'll never think of you like they would any other creditor
I've decided that if I can afford to lose it and want to help (those are two key qualifiers), I'll do it, but that it's useless to count on ever getting it back _________________ I likes to eat 'da pig!

Been on both sides of the family loan thing, neither was any fun.
JAllen, with the price increase did you find a need to increase your advertising and did you get much feedback from your customers when you presented the new menu? _________________ UDS

bootlegbbq, no need to increase advertising (we currently advertise in just one journal read by expats.)

The only pics I am waiting for are of your Yak throwdown pics. Surely it does not take this long to smoke one. Heck, I flew out of country, found, killed, processed, cured, and cooked all in a two day period.

To hell with the Yak pics, I want to see the pictures of the tail from Womens day, right about the same time JAllen got in trouble with his beautiful bride.

As far as pics, hotties, yeah well....

New recipe chili......
Anything will do........
PS: Here's a recipe I found during research ~~~>
Yak Ribs 2lbs Yak Ribs
1lb Daikon Radish
1lb Tomatoes
1/2 cup/4oz green chili, canned, fresh or frozen
2 Tbspns powdered ginger/2 tspns fresh ginger finely diced
2 Tbspns Butter
8oz vegetable or Yak broth
Saute all together except the daikon, in the pressure cooker and cook for approximately 1 hour, or cook overnight in a slow cooker. Add finely diced daikon radish at the end of cooking. The meat should be falling away from the bone.
This recipe was provided by Karma Lama of Ten Thousand Waves, in Santa Fe.

a bbq hack, while prepping his yak, tried to capture the form of a lady
her picture he took, then she gave him a look saying that yak isnt ready for gravy
the yak got up from the spit, and ran clickety click, now we think the yaks in the navy....cj
...its the best i can do on pain meds....cj |
