9pm
Earlier tonight we had a nice experience. Two Texans, Bob and Scott came in with their families and ordered a bunch of stuff.
I walked over and introduced myself and I notice Bob has brought in his own BBQ sauce.
He shared some with me and it was a good, sweet Texas sauce.
We got to talking bbq and Bob whips out his cell and shows me a picture of his smoker that he has here in Bishkek. It's a nice little offset.
Scott says that he's got an identical one here also, so we start talking smokers, briskets, blah blah. It was really nice change, as all the bbq talk I've done over the past year as been on TSR. (I really like tsr, but it's all typing)
I haven't actually spoken to anyone knowledgeable about bbq for a long time.
Well, at the end of the dinner, Bob says he plans to bring his entire staff of 25 in a couple weeks.
But before he said that, he mentioned his first time here. He said the ribs were so good that it was an "emotional experience."
His saying this gave me an emotional experience.
I also learned that Bob's brother used to be a lineman for the 49ers and his brother had a steak house in Texas.
He left me with a bottle of his Texas BBQ sauce and I must say it was a dandy. _________________ Reverse flow Sterno can

I agree TSR is great but there is nothing like a good ol' face to face chat with a fellow BBQ'er.

We received an emotional experience in Texas after reading these three words “sweet Texas sauce” and almost had a mental breakdown since Texas BBQ needs no flavor cover-up. Just kidding, well kind of.
It nice and encouraging to receive positive comments on food. |

I'd ask Olga if she could arrange a DVD of the clip......
Go with more pork and chicken if that's where the yield is proving up. Raise the price on your beef/lamb to reflect reality. Can't fight market economics, people will understand if prices are going up across the board. |

230 pm and I haven't even thought about bbq today.
Police, our guards, and a district attorney are all huddled in the main hall sorting out a situation.
1 am last night and there was a brawl.

It seems a couple locals came in drunk, and Julia served them some more, and they started giving her a bad time.
Then the guard came over and asked them to behave and they started getting up in the guard's grille. Julia called the guard company and they sent a couple more over, including a real big, tough one.
The guards were just trying to make these guys pay their $3 tab. Well, there was a scuffle near the door and one of the unruly customers took two or three swings at the big guard before the "takedown" happened. Customer was big enough that four guards had a very tough time with him.
In the process of the takedown, they fell on my drums, causing some expensive damage.
After this, the guy on the ground got a dusting off by the guards, who had had enough of his antics. There were three kicks to the face, and from the looks of it, this guy's neck is lucky to still have a head on it.
Now, word around the campfire is that this guy is in the hospital getting a neck massage and a big band-aid on the front part of his face.
The capper is that we need to have a copy of the transpired events, in case this guy comes back. (He's a doctor here, by the way.)
The security company is worried about the face-kicking tape getting into the wrong hands.
So we call the video system guy, but I'm concerned the guards got to him first, and asked him to make sure we didn't get a copy of the incident.
I asked him to copy the two hours of fun onto my flash disc.
He copied only the downstairs camera, left in a hurry and I'm up here looking at our downstairs toilet.
Mrs. JAllen says the original hard disk is in her purse, so we have nothing to worry about.
There was a lot of crazy, stupid stuff happening, including the return of one of the said "rowdy drunk guys" who came in after running away from the police station where he was being held. He comes in with a headache, resuming being beligerent, threatening and Julia is behind the bar.
She pours him another drink. Believe that.
He continues being bad, so the guards are called again, and in trail come the regular police, an investigator, and a district attorney.
There's a mini court case going on, and I've never been so unhappy to have so many people in the restaurant.
Anyway, the police end up dragging Mr. Rowdy out to his calls for help to Mrs. JAllen who is the only one who can stop the legal process by saying she won't press charges.
She says she'll drop the charges if the guy pays for all the damages and that's where we are now. _________________ Reverse flow Sterno can

I certainly don't dispute nor condone the ill behavior, and I'm glad the douche' bags were dealt with.
But the need to destroy video evidence hints at excessive force.

A typical day in the FSU.....
The interesting parts of these situations are when the security company, which is always "connected" to the power structure, runs into someone who has near-equal clout.
Here's a little episode which shows you how things are in that area of the world for restaurant/bars:
This takes place in the Ukrainian city of Lugansk, population - of about 525,000, in one of the most popular places in town. The man sitting in the booth with the three girls is the restaurant manager. The man who comes to the table and confronts the blonde is a City Councilman and also has a father and uncle serving in the Ukrainian Rada (equivalent of Congress). Like JA's story, a guard will eventually show up and it's worth noting the behavior of the waitress with the check and, of course, other patrons.

Yeah, they dinged a $300 cymbal and crashed onto the bass drum during the fun, breaking one of the legs of the bass drum.
The cymbal might live, but the drum leg is lame. I checked on ebay and can get one shipped here for about $90.
