I just got a Masterbuilt Electric Smoker for Christmas. The temperature on it can be adjusted from 100 to 275 degrees.
I have read that cold-smoking salmon requires a temperature of about 80 degrees. Most hot-smoking recipes I have seen for salmon start at 160 degrees and go up from there. Since my smoker is capable of temperatures in between 100 - 160 degrees, are there any benefits to lower temperature smoking? Can I smoke salmon at temperatures closer to 100 degrees and get something closer to cold-smoked salmon? Has anyone tried this? What are some guidelines? What temperatures do you use? How long do you smoke it for? What kind of brining/curing do you do first? |

You will be ok at 100 deg if you need to lower the temp more fill a pan with ice and place the salmon on a rack directly over the ice as cloes as you can get it and set the thermostat to 100 deg salmon usually don't take to long and a pan of ice should last 3 hrs. I cold smoke cheese in warm weather that way. _________________ Never met a cow that I didn't like with a little salt and pepper.
