I have been served raw chicken several times at many different places. And the thought of getting some one sick just doesn't turn me on.
So I do check meat temps on the chicken I serve. I pull it off at 170 degrees to pan it. I don't want to serve over done tough chicken, even if I am dcing several hundred pieces.
I want it to turn out like my comp entries.

Actually, a UDS does just the opposite. The temp goes up the longer you keep the lid off. Then you'll have to fight to get the temp back down but good luck after the coals take off... |

You will pretty much ignite all of the charcoal in the basket and have grilling temps if left off for 3 to 5 mins. And if you left it off for 10 mins you would be searing steaks in the greater than 600°+ range. Not to mention if any residual grease is in the bottom that catches fire, it will be shooting flames out the top. Recovery in the sense of BBQ temps will never be achieved unless you snuff the fire and start over.

If you snuff the flames too much or have a grease fire, you will get bad smoke. Even though a UDS will recover quickly, you cannot leave the lid off for any length of time.
... and if it matters, I would buy one of those thermos at that price, if I didn't already have "the fastest RED ThermoPen known to man." Let us know how it works, I may still buy one. Thanks for sharing. _________________ Kill a cow, Start a fire ...

| The Thermapen is the top of the line thermometer. Everyone knows it. They make the best on the market. What everyone can't agree on is the price. For the rabid protectors of the thermapen, it provides a value in speed that is worth it at twice the price. |

So, I do have one of these and truly love it! Is it as fast as a Thermapen? No. Would I like to own a Thermapen one day? Yes, I would like to have a Thermapen eventually, but I am more than happy with my $15 purchase as opposed spending a C note on the Thermapen.
As far as opening up my pit to check on what I am cooking, when I use this, I put it in what ever I am cooking, close the lid, wait a few secons (with the lid closed), open the lid and see what it reads. So, all in all I probably only have the lid/door open for a total of around 6 seconds...and, one of my smokers is a UDS, and 6-10 seconds does not throw off my temps that much to even worry about.
Give it a try, you will really like it. It is a very nice tool to have, it is very affordable and has worked like a charm since day one. And, it only comes in the fastest color avilable - yellow! LOL...have fun with it, and with the money you saved buying it instead of a Thermapen, go buy some beer and meat!!! _________________ 1 homemade UDS smoker

To the OP,
I bought one after BigPhil's post on it and have been happy. Gives readings in a reasonable amount of time and mine is accurate. I can't give you a +/- range, but I checked it in boiling water and ice, and it's good enough for what I'm doing.
If I was catering and cooking a hundred chicken quarters at a time or something, I'd invest in a $100 thermometer.........but the fact is I'm not, and can afford to have the lid open for few more seconds, so the $15 thermometer is just fine.
At the end of the day, you have to decide what's best for you. I can buy a lot of meat and/or steel for my new cooker with the $85 bucks I still have in my pocket.

I bought the Fieldpiece a couple of months ago and have been very happy with it. Doesn't read any slower than the Thermapen and the temp readings were the same as the the TP. Gonna go get me another one this week for a backup. I know the TP is 'splashproof', but I spilled beer all over the cheapo, and it still works fine. _________________ The Matt Ryan of LIARS! (#2)

| I just recieved my first thermapen in the mail today. I got the smokin hot red one and it is fast. 2 seconds to check boiling water and that includes turning it on. Glad I went red. |
