I've made a LOT of gumbo in my short time on Earth, and everyone liked it, but it hasn't looked like my Coon Ass friends does!

So, I figured since it was a bit chilly for us here in North Texas I'd try his recipe...

This gumbo will have chicken, smoked sausage, and shrimp in it. It'll also have all of the veggies K.A.M. calls for in the recipe.

Here you shall see MOST of the ingredients... Chicken was already in the pot!


Beginning of the roux


Getting a bit closer to the roux being done! Big stainless pot at the back holds the good stuff!


Roux almost ready!


Pulled bird ready to go back to the juice!


More pics later (maybe tomorrow) after the goodness simmers for quite a few hours!

Sorry for the late reply folks. Had a family member request a brisket at last minute for a funeral of a co-worker of hers...

The gumbo rocks! Lots of meat, great flavor, and the roux was the way to go.

Yeah, I used a non-stick pan for it. Embarassed The only CI I have here is a DO and that doesn't work well on the stove top at all.

If you've never had gumbo, this is the recipe to try!



Now, off to check the pit and get another bowl.

That looks like something my son & I could go through a couple bowls of each!

And I have a nice big cast iron D.O. that works on my stove top well.

Where does one find the recipe? Very Happy

LOL - Just the start of about a 10 quart stock pot full of Gumbo Goodness!
Pot was simmering - You can still see some steam off to the left and right hand side of the pot...

Hey; if 'Ya never tried K.A.M.'s recipe for Gumbo,Ya'll haven't begun to
live yet! Wink

I never make a roux when making gumbo, I just use some file powder my sis brought back from N.O. Probably not "correct", but I turn out outstanding gumbo.

vw addict...File (properly pronounced "fee-lay") is-in my opinion- one very important necessity of a roux when formulating a Gumbo recipe.

It is not, however, the "fix-all" by itself when preparing an authentic Gumbo as described in some of the previous posts.

Hope I'm not being too Gruff, as that is not my intention.

Just trying to broach the subjectivity of preparing a proper roux for Gumbo.

YMMV... Mine Did Not. Wink
