Whipped up some delicious Chicken Cordon Bleu this weekend in a friend's smoker.
Took the breast and butterflied them, added a smear of huney mustard, topped with provolone, serrano ham (like prosciutto) and gouda cheese. A sprinkle of chili powder finished off the filling.
I rolled the breasts and then wrapped in bacon.

I tried to get the smoker up to 325*, but the very cold temps outside made it difficult to get abouve 295*. They went for about 1 hr.
At the same time I had some bacon wrapped jalapeno poppers going, and some awesome potatoes and peppers which i tossed in some rendered slab bacon and carmelized onions!
