I am trying to plan around what I think might be a timing issue with brining a few halfed chickens. To keep from over brining, is it ok to rinse the brine and leave the chicken set in the fridge for a few more hours until I'm ready for it? or something else I might consider?

If you're concerned about the chicken being salty from over brining, you can soak it is fresh water, changing out the water every so often. Salt tries to find an equilibrium.
