Mmmmm, Carnivore Heaven. Keep it warm, I'll be down from Minnesota in two shakes of a lambs tail. Your smoker looks like my friends when he lights it up. Everybody in the neighborhood quickily finds something to have him smoke for them. It is a joy just watching the smoking carnival! _________________ LURKER

I was wondering the same, at first I thought it was a "Chicken Diaper" (the absorbent pad that grocery stores place under the packaged meat)
A damp paper towel?

Probably cheesecloth, but it looks thick (multiple layers) and may have been loaded up with butter or something. _________________ Scott V.

Cheescloth is what is placed on top of the turkeys and sprayed with cooking oil to keep the top from drying out.
