Mmmmm, Carnivore Heaven. Keep it warm, I'll be down from Minnesota in two shakes of a lambs tail. Your smoker looks like my friends when he lights it up. Everybody in the neighborhood quickily finds something to have him smoke for them. It is a joy just watching the smoking carnival!

FYI the Private Stock was for the cook, thanks for the replys, it was a great Thanksgiving, hope everybody else also had a great one.

I was wondering the same, at first I thought it was a "Chicken Diaper" (the absorbent pad that grocery stores place under the packaged meat)

Probably cheesecloth, but it looks thick (multiple layers) and may have been loaded up with butter or something.

Cheescloth is what is placed on top of the turkeys and sprayed with cooking oil to keep the top from drying out.
