Well after a friend at work was talking about brisket the other day, I started getting a hankering. I picked up a not quite six pound flat as my victim.



I gave it a bath overnight in red wine, Worcestershire sauce,
a few pepper corns, some garlic & onion powder,
a little olive oil, a squirt of lemon juice
& probably a couple things I forgot about. Laughing



I took it out the next morning. It seems
to have sucked up some of the yummy
goodness!



I rinsed it off and gave it a good rub with
Big Ron's In The House & a few other things.



Right now it is still relaxing in it's nice warm
smoke bath. A little black walnut & a little cherry.

Here it is at about 12 noon. Roughly three hours in.

It is definitely off to a good start. Not sure why it wouldn't finish just as good...

Just a quick update. The WSM is cruising along nicely for a 45° day.



Here it is at about 6 hours. Just hit 157° internal.

Beertooth - Looks wonderful. That ought to make some great sammiches. Never thought (or had the opportunity) to use black walnut. How do you like it? What would you compare it to?

- I was at the caverns a few weeks ago with my son, daughter n law, and 3 month old grandson. The baby had gas and it is amazing how far a baby's fart can echo through the cavern. Shocked Maybe 1/4 mile. And before you ask, yes it was the baby and not me.
