Well after a friend at work was talking about brisket the other day, I started getting a hankering. I picked up a not quite six pound flat as my victim.
I gave it a bath overnight in red wine, Worcestershire sauce,
a few pepper corns, some garlic & onion powder,
a little olive oil, a squirt of lemon juice
& probably a couple things I forgot about.
I took it out the next morning. It seems
to have sucked up some of the yummy
goodness!
I rinsed it off and gave it a good rub with
Big Ron's In The House & a few other things.
Right now it is still relaxing in it's nice warm
smoke bath. A little black walnut & a little cherry.
Here it is at about 12 noon. Roughly three hours in.

Just a quick update. The WSM is cruising along nicely for a 45° day.
Here it is at about 6 hours. Just hit 157° internal.

Beertooth - Looks wonderful. That ought to make some great sammiches. Never thought (or had the opportunity) to use black walnut. How do you like it? What would you compare it to?
killswitch - I was at the caverns a few weeks ago with my son, daughter n law, and 3 month old grandson. The baby had gas and it is amazing how far a baby's fart can echo through the cavern. Maybe 1/4 mile. And before you ask, yes it was the baby and not me.
