I thought I would make this a poll in this section to gauge what the Comp Cookers use in their rubs.
And why do you use what you use?

I use kosher. I think the flavor holds up to the heat and longer cooking temps better. I also think the texture makes for a better bark.
For sauces and brines I prefer non iodized table salt because it dissolves quicker. _________________ Mike

Save some money and buy course sea salt in bulk, which is what kosher salt is after all. I can get sea salt at the bulk store for a few cents more than table salt.
