First off, hello to all. I am a new member to this forum, though I have frequented it for quite some time now.
I have access to large cuts of pork belly through the family restaurant's meat distributor and what I would like to try is stuffing some hearty cuts into a turkey and then smoking it for Thanksgiving. Im looking for anyone's thoughts/ideas/feedback on this as I couldnt find any information on the matter. Thanks everyone! _________________ Brinkmann Gourmet Electric Smoker |

Welcome to the ring halfasian, looking forward to seeing some pics of your cooks.
Stuffing a turkey for smoking is not a recommended practice. Not to mention mixing poultry and pork in a raw environment might have the makings of a good meal going south. The turkey will will stay in the danger zone for some time to cook the pork or anything you stuff it with. My advice is to not stuff the bird if you are going to smoke it. _________________ Always remember slow and steady wins the race.

if the bird and the belly were properly cured, it would make it alot safer to try.
But I just do not see cured pork belly being stuffed into a cured, smoked bird being very appetizing.
At typical hot-smoking temps, the interior of that pork stuffed bird would be in the funk zone for hours, I am betting the pork would sour, and you would have a plethora of nasty bacteria growing in there that could sicken the rest of Haiti with one bite. _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |

You never had Purkey or Tork? Now that's some good eating...

Make sure you put the bird on the lower rack. You don't want poultry drippings on your pork... |
