First of all, thanks to all of you for great insight you post here. I have learned a ton on this forum. Mostly have been on Comp/ side but looking to try and take the next step.
In my state, Alabama, I was told that I could get permission from an existing resturaunt to use them as my commissarry. The question have is whether this is very common. If so- What is the best way to approach a business owner with the proposition???

Are you friends with any owners? Ask them if thewy would rent you some space to receive food deliveries, fill up your potable water containers, etc etc.
I had to do that for a little while to do some larger events on public property.
And now that I have my own place. I am returning the favor for a guy that wants to start a tortilla business. _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |

I know here is austin it is very common as there are a couple hundred vendors and only 3 commissary kitchens. If you have a place you frequent, maybe know the owners name, ask there first. Otherwise trial and error, worst that can happen is they say no. _________________ 22.5 Weber Kettle

Thanks for the help... I figured it would be a bit of trial and error. I just wanted to make sure there were not some standard "guidelines or etiquette" I needed to follow.
The only guy I "kind of" know in my town started his place about a year ago. just in the last 2 months, he has relocated to a HUGE property so I would imaginge he has a little spare room. The only problem is, he does BBQ also and was afraid he might view me as direct competition.
Like you said, all he can say is NO!!!
Thanks again for the help... I am sure I will have more questions in the future. I will try and read the old posts before throwing something out for the 10th time!!!

I use my local homeless shelter as an approved commisary.
I'm self contained and only need the facility for fresh water pick up, grey water drop off.
They get the benefit of all unused food from my catering jobs.
I get the benefit of not being charged a monthly fee. _________________ BBQMAN

You belong to any clubs that have kitchens(eagles,lions,VFW) or know of any rants that are so ask them first. _________________ Good BBQ is all smoke and beers!

This is what I am doing...our local Grange has accomodations that fit my/HD needs and no need to try to establish a relationship with a ruant owner that sees you as competition, which effectively you are.... |
