I cooked about 50lbs of pork shoulders last weekend. Didn't seem like I ended up with half once cooked. Any help on how to judge?

I've found pork butts cooked low'n'slow to pulling temperature usually yield right at 50%, give or take a few, once the wiggle bone and any fat blobs are separated out.

"Judging" was through weighing - once - just out of interest to see if the popular perception was accurate (it was). Beyond that one time it's just by eyeball-enhanced gut feel...

Cheers!

You loose 63 - 67% on whole / half hog, when you take out the bone, skin and fat, if you get to serve the skin as well, then you'll loose about 60% by weight.

Dang it. . . that just makes me sad! Sad Wink

I did Adkins 8 or 9 years ago. . . and BBQ fit right in with my menu choices (except for sauces). No sides, unless you count another meat as a side! Shocked (which I did) Embarassed

I did a brisket a couple of weeks ago and it looked like it lost about 50% in size.
