leftover pulled pork (chopped)
Small pan of cooked white (jasmine) rice
Regular size can of black beans
Shredded cheese ( I like queso or you can get the Mexican mix)
medium sized flour tortillas
homemade or canned green enchilada sauce ( I just buy a 28 oz can of Las Palmas at the Spanish market)
Preheat oven to 375.
Warm up the pork up in a pan with a little of the green sauce. Heat the black beans up as well. Microwave the tortillas for a few seconds to get them pliable. Lay a tortilla out flat. Put a layer of rice (1/3 cup), beans (1/4 cup), pork (as much as you like), and some shredded cheese down. Roll it up and lay it in a baking pan that has been sprayed with a little Pam to keep them from sticking. Pour just a little of the green sauce on the bottom too. Keep doing this until you fill the pan. Cover the enchiladas with the sauce and then cover with more shredded cheese. I sprinkle a little of my rib rub over the top for color. In to the oven until the cheese is bubbling good and brown ( about 30 minutes). Serve with your favorite frosty cold malted adult beverage. I also like to top them with a good vinegar based cole slaw and some sour cream too, but that's just me. Total prep and cook time is less than 1 hour _________________ "Blood makes you a relative. Jo Jo, the ribs and yard bird look awesome. Beautiful color on both. Your enchiladas are only missing two things, a plate and them sitting in front of me. They look beautiful, I love pulled pork enchiladas or quesadillas. Nicely done my man.  _________________ Always remember slow and steady wins the race.
