Just got back for St Catharines, the Ontario Championships, where we competed in our first competition. We did so much better than we hoped we would which is such a thrill to say the least.
We finished 2nd in ribs, 4th in brisket, 6th in chicken and dead last in pork, dont know what went wrong there as the team thought we had a great product.. Oh well, better luck with that next time.
We finished placing 4th over all.
I would like to thank all you guys here at the forum for the tips and excellent advice you all have offered up. I have learned a lot from you guys and and we wouldn't have been able to do what we all did this weekend without the Smokering...
You guys are the best !!!

We had an excellent time and made some new friends. We got a real good group of teams up here and what a party Saturday night.

Thanks Mike, we had a lot of fun but it sure is stressful come turn in time. Thought I might need to barf...
Molson did a great job with the ribs and cooked up 6 racks that made it hard to choose what to put in te box.
Tibor has been working on his chicken fomula like a scientist and it came together very well, chicken is a tough catagory and he did a great job. _________________ Chargriller Akorn

Congrats, and how many teams were there? I am guessing it was kcbs judging by the 6 slices of brisket and the garnish..congrats that isa great showing..
Looks like you mixed sauce in with your pork...do you think that might have affected your scores? |

The CBA follows the KCBS rules for presentation but they dont allow parsley, just green leaf lettuce in the box.
I did sauce the pork as every one seems to do the same thing. I will present differently next time with some without sauce, I do think the meat was good, at least the team thought so. We did get a 94 out of 100 from one judge so I guess it was right for at least one of the judges.
I think there was 12 or 13 teams at this event with one team,Frying Pan, comming all the way from PA. _________________ Chargriller Akorn

well I cant really make any comments on the taste or texture of your meat, but on appearence I would have done a little more sperating of the bark and inside...not just all mixed together..
and maybe go without sauce next time. Not saying that I wuld kick up the flavor of the meat before I put it in the box, just use a little more discrete sauce instead of one that is going to scream "Hey I got sauce on my meat."
Same thing happened to me though in Gray, turned in some of the best pork I have ever made and didnt really score that well...it happens...great showing though...now you just have to keep doing it... |

Way to go girl, you did an outstanding job in your first amateur event. Tied for 6th is excellent. You were up against some tough teams and you did it without any help or coaching..!!

what will really drive you mad is when you turn in the exact same pork somewhere else and get 1st place... |

Great job guys.
On the pork, I would suggest you use bigger chunks and show a little more bark. Awhile back, Mike (allsmokenofire) posted pics of his winning pork boxes. I printed a copy for my "it should look like this" example. It helped my pork scores a bunch.
Sounds like you guys have the rest down.

Actually my friend, you placed 4th overall. Third place was a tie.

I'm getting out of catering and competitions and will look for a new job...
