Posted: Sep 20 2010 Post subject: Apple Smoked Dry Aged Beef Ribs |

I was down at my local meat shop the other day and picked up 3 racks of Dry Aged Beef Ribs. I seasoned them up with Big Ron's Original Rub. I fired up the offset with a chimney of lump and then switched over to an all apple fire.I cooked the ribs for 5 1/2 hours ,no foil @225-250 degrees,spritzing with pure apple juice every hour.I slapped a little Head Country BBQ sauce on mine.I served them up with some baked taters with grated cheese on top,and a little bit of sautéed mushrooms,banana peppers and onions.
Had a nice easy afternoon watching the ribs,smoking a cigar and following the football scores on my Blackberry.

What was the price on the ribs?
Gotta find someplace that sells some nice beef ribs like those. |

That is a hell of a deal.
I pay that for really crappy looking racks with half the amount of meat...
Maybe you send me a few racks.  |

Great looking ribs! I've never smoked beef ribs before, maybe this weekend I'll try them. Tough loss for the Skins today. That loud sucking sound you heard was my Titans offensive effort against the Steelers. Need some good que to make me feel better! _________________ Scooter

Ditto on that one! I wish the meat markets around these parts sold aged beef or even beef ribs with that much meat on them.

Hey thanks again my fellow ringers for the kind words,they were very tasty,tender and meaty and they allways have lots.I now have one stop shopping for my briskets,butts and ribs,and best of all its right at the end of my street.I did not even know the place was there until I was looking for Spaducci(Australian Lamb Skewers)online one day and noticed this address is to close me,checked it out and now its one stop BBQ shopping.  _________________ Horizon Offset (Marshall RD Special)

Nothing like a fine meal and a fine cigar...nicely done. And those are the best looking ribs I've seen. I hope they tasted as great as they look. Go Skins!
