Posted: Sep 15 2010 Post subject: Help with a Very important Menu |

Long story short, I had surgery August 6th and have been on a soft food diet. Just got the Okay from the Doc to start eating real food again. During my recovery I had two neighbors take care of all my yard work for me. So this Sunday I am having them over for my first Q. My question, EVERYTHING sounds Great right now, I have been reading this forum for 6 weeks and have TOO many great ideas. So, I need to narrow it from 100 items down to about 3-4.
I also need ot let you know all I have is a vertical smoker, so space is restricted. I am thinking one long smoke (pork or brisket) then when I pull them off to rest and wrap them for 2-3 hours, I can cook something else.
Any suggestion. |

If your just starting to eat real food again... you might think about going lean'ish. Ease into Pork, Ham, Bacon and Pork.
Roast Beef is an often overlooked BBQ meat. A big Round Roast fills space, and can be sliced out for later consumption.. cold sandwiches, french dip, burritos, vegetable beef soup, beef stroganoff, etc.
Chicken or Turkey would be another good BBQ culprit that's satisfying yet lean. _________________ Traeger 075 "Big Tex"

Ask your neighbors what they want, then offer them a few choices based off of what they like.
I would do ABT's and a roast. Could even go with a Tri Tip. Chicken and sausage are always a good combo. The left over chicken makes tons of other stuff-tacos, burritos, soup, sandwiches, casserole, chili, its endless.
Just make sure you take pictures.

I vote for ABT's for sure. Everyone I serve them to damn near has kanipchen fits they are that good. I also say ribs. Everyone likes a well cooked baby back rib. _________________ In the shadows of Lambeau |

But if the author is just going back to solid food, dont really want to make him sit on the toilet for the rest of the night.

Well, I took your advise, asked them what they want. One wanted Brisket with a lot of beer. The other wanted Ribs, anything else was a plus. So it looks like Ribs and Brisket, but I will be doing the ABT and I saw one thread on here someone had a 'moing ball', I think i might dabble in that also.
So, wish me luck, Can't wait for Sunday.
PS, Saturday is my 40th BD. WOW, going to be an awesome week. I will be sure to post pics. Seems to be almost like p*rn on here. the Forum is good, but pictures are better. |

Sometimes you have to take one for the team! Frankly I think anything bbq'd would be rough on the system the first day back. Either way, I'd fight through the pain. ABT's are worth slinging a little mud over _________________ In the shadows of Lambeau |

So to cut your time cooking and to use up space cook a brisket flat, if you cant find one then buy a packer and butcher it down. Put it on the bottom rack with ribs above. Hopefully you have 3 racks cause the ABT's need to go over the ribs |

I do have three racks. That is a great idea.
Man and I am pumped for this cook. NO BBQ for 6 weeks and now this. I know I will fill out WAY too quick, but just looking forward to actually having some. I have never had or made an ABT. that may be what I am looking forward to the most. |

I would recommend not having company over for your first Q. In my humble opinion, having company for your first Q us a bad idea because it most likely won't turn out.
For this weekend, have a cooler full of ice cold beer and grill some steaks. I'd recommend inviting them over for your 4th or 5th Q.

There are many versions of them.
I am partial to the "Chicken from Hell" variety that is from the Smoke and Spice book.
If you need the recipe let me know.

That was HONESTLY not my intention.
I was thinking about the early days when it seemed like no matter what I did, something would inevitably go wrong. "Be here for dinner at 6:00" often turned into finally serving SOMETHING horrible at 8:30. My poor guests were always really polite about eating some really substandard stuff.
I honestly wasn't trying to kill anybody's excitement. Like I said in the early days things just never went the way I anticipated and my poor guests were always at the receiving end of whatever debacle I'd created earlier in the day. I was trying to convey what had happened to me, but unfortunately what I wrote had nothing to do with what I was thinking.
