Our team is going to do our first large cook next month for a Senior Citizens Center here. There will be between 75 and 100 people to feed. I am planning on doing 6 butts for sammies, 3 packers (some sliced and some chopped for sammies), 40 chicken halves(to be quartered after cooking), 2 gallons of baked beans, potato salad, cole slaw, and some type of dessert. Do you think I will have enough food for the number of people expected? I am not as worried about leftovers because I can always take them to work and they will be gone rather quickly, just don't want to be short. Thanks for the help. _________________ Bo Jackson

I think you have more than enough food. Those old folks don't normally eat that much...
Seriously tho... If your smoking the chicken, be sure to explain to them (in detail) the fact the the chicken meat will be pink. Most of them, if they are not accustomed to smoked chicken are going the think that it is not done... Don't ask me how I know... They usually won't eat pork that has any pink left to it either, but you won't have that problem with da butts. Those seasoned citizens are funny that way...
You could probably cut the amount of meat in 1/2 and still have enough to take to work.
