Has anyone tried putting cinnamon in a rub for pork? I'm wondering how it would perform in the smoke, whether it would become bitter. _________________ It is easier to ask forgiveness than permission.

i've never done it in pork but i make a chili cinnamon rub for chicken and have never had a problem. _________________ UDS

i have a pork and sweet potato stew recipe that has cinnamon in it and it works real well. it adds a warm, earthy flavor, but keep in mind a little goes a long way. _________________ Im not a proctologist, but I know an asshole when I see one!

| I have used cinamon quite a bit, especially when doing an spiral cut loin stuffed with apples, cinnamon and feta cheese. It is a great taset for the pork. BUT!!!!! you need to be really careful on how much you put in rubs and whatnot because it is a very overpowering seasoning. |

With Alien's Hurricane Turkey, the entire bird is literally doused in cinnammin cinamin cinammin? and there is hardly any taste of it after cooking. It does still smell a little bit, but taste is very mild. _________________ Since Christ DIED for us, we should LIVE for Him!

I have used cinnamon in my rib rub for about 3 years, it adds a mild taste to the meat. I also substituted cinnamon for the garlic in the "Pig's Worst Nightmare" and thought that it complemented the apples and sugar in that rub nicely. |

Yea all the thyme.
No really, cinnamon and pork go together very well.
Cinnamon, nutmeg, cloves, mace all go well (in moderation) and
are completed by grilling or smoking. _________________ -------

Yes.
In a very small amount.
Last butt i smoked had some in the rub and it added a very slight hint of it.
Everyone said the bark tasted awesome and that there was a flavor that was not present in my previous rubs that went well with the pork. I picked it out immediately cause i knew the "secret" but it was so subtle. |

Here is what I use on pork. It has cinnamon in it, but only a small amount. I added it last in small increments until I could jus barely taste it. It is an interesting flavor, but I can see where too much could be a bad thing.
1 cup turbinado sugar
1/4 cup sea salt
1/4 cup black pepper
1/4 cup chilli powder
1/4 cup garlic powder
1/8 cup onion powder
1/8 cup mexican oregano
2 tbs smoked paprika
1 tsp cumin
1/2 tsp white pepper
1/2 tsp crushed rosemary
1/2 tsp chipotle powder
1/2 tsp dry mustard
1/4 tsp cinnamon
