garden has exploded with eggplant. wanted to try to see if i could smoke one to make a dip..

zero clue on any technique.. any wizards who have done this before?

I have done it with zucchini with much success - turns them into mashed potatoes!! 4 hours at 225 - I would imaging eggplant would do the same - what could go wrong.... Shocked maybe poke a couple holes to vent a bit, but the zucchini didnt explode![and was quite good after a touch of seasonings]

I like to throw a couple of them on the cold side of the grill after grilling steaks and such. Leave the top vent open and let the charcoal burn out.

Skin it, add some garlic, tahini (ground sesame seed paste), lemon and olive oil and you have a tasty baba ganouj.

I like to slice em rather thick, brush with Italian dressing, and grill till tender... careful though... they cook quickly and if left on too long will get very mushy.

Not smoking but grilling.
But the grill is full of lump fuel..

I'm not an eggplant fan but my mom and sister-in-law sure are. . . Hey whitey, what kind of herbs you got on those puppies?? Also, is that butter or some type of cheese (goat??) on the finished product?

I might have to break down and give these a try. . . .(my mother will be shocked!) Wink

I eat a fair amount of eggplant.

I tried smoking it months ago and it was terrible..I mean horrible...I mean inedible. We too the smoked eggplant and seared it off with a light coaring of oil at it was almost palletable.

Grill it hot and fast like a steak, not low and slow.

Sea Salt Black pepper and celery seed.Then the relish is Cilantro,tomato and Feta with just a splash of EVOO..It was very tastey indeed..
