It's been a good 2-3 days since we had a dust up in the Catering forum. Guess we were about due.
Randomly adding cheese to a simmering tray of Mac & cheese seems I'll-advised for the reason I spelled out above. I'm not sure how much cheese I'd add to that foil pan either... _________________ 22" Weber Smokey Mountain + Weber Spirit |

Here's where a little good faith could have avoided the dust up.
Solanabeacher, you posted a recipe that was inexact; the questions on the block sizes were pretty reasonable and I didn't see any that were insulting. You could have left it at your guess of the one lb block, but you had to go on to kind of imply that we were all going to steal your recipe ("make it your own") and that you weren't a good cook if you didn't know instinctively which one it was (you didn't seem to know). If you don't want those kind of questions, you probably shouldn't post your recipes. There is a big difference between 1 and 2 lbs; no reason to disparage people who were interested in your recipe.
Jarhead, you used a hammer to squash a gnat. OK, so you were offended, but this was not an insult to your mother's honor; it was just an indelicate response to a reasonable question. You went from 0 to 100 in 2 seconds. That's how we all get whiplash Take a deep breath.
OK, so this was offered in good faith and I will do my best not to respond to insults, so please don't offer any. _________________ I likes to eat 'da pig!

As usual this has been blown way out of perportion. I jsut wanted to list what I do for mac and cheese. What I listed is basicly "my own" version of the famous Alien mac and cheese recipie.
All I was saying was, I don't have an exacto recipie take what I do and make it your own.
Noting to do with attitude, hillbilly country, steeling recipies, or any other offensive cheap shots.
Jarhead, I'd do anything to help a guy out, sorry if I cam across in any other way.
AND for the record, I don't have an exact recipie for mac and cheese.............it may be a little different every time, but I always get compliments on it, and I'm ok with that.
If I get it down to an exact science, I'll be sure to post it for you all to see. |

That's the problem; when putting things in writing, you have no inflextion or other verbal clues to guess what somebody really means. You have to carefully scrutiunize how you word what you meant to say.
You may not notice, but I post pretty often in the Catering forum and I don't think I've ever gotten into a tete' a tete' with anyone, even when I disagree (caveat, I did get into a fun little dustup over SEC football, but that's religion, not BBQ )
I was not really offended (I thought you were being a little chippy), but I can certainly see how someone could have been offended. _________________ I likes to eat 'da pig!
