I've been using Chicago Cutlery knives for about 30 years. I've had a few "good" knives in that time, but none that I liked any better than CCs.

All good suggestions on blades, and I can't say anything that hasn't been said already. The only thing I'd add is that I'd get a home sharpener (stones, not an electric) kit. I have a Spyderco home set that I got on ebay (retail is I think $80 or 100, got it for around $40).
All knives will dull, and that round stone that comes in the blocks hones your edge but won't sharpen. Nice sharp knives make everything in the kitchen so much more enjoyable, and doing it yourself is easy and saves a ton of money over time. After I sharpened my main knives, I was so pleased I went and sharpened nearly every blade in my house (scissors, swiss army knive, etc...). You don't realize how dull some of your knives are (even from the factory) until you sharpen them.

That is a great sharpener.
