Has anyone smoked peppers?

I have a bunch of cayenne peppers and I was thinking of trying to smoke some, kind of like chipoltles.

From what I gather it takes a really low, dry heat, so I'm thinking of my modified brinkman with a little charcoal and no water in the pan.

I gave smoking cayennes a try.

It worked really well. I just built a small fire in the smoker, with no water pan, and put the seeded, de-veined peppers on the top rack. It took a few hours to dry them out. They got totally dried out -- crackly & crunchy.

Cayenne peppers have such thin skins they dry out much faster than other peppers, like jalapeņos. Some of them got dark brown color, while others stayed red. I took a bite out of one off the smoker, and it was really good, so I ate it and another, which was a mistake. The second one was a lot hotter than the first, and not only was it hot, but it stuck into the cracks in my teeth.

Anyway, it's really easy to do, and it goes really fast. I put them into a jar and used a wooden spoon to crush them. I think I'll do more. I just harvest about a gallon more of them.

I have a friend who does this every year and uses a coffee grinder to grind into powder. Homemade paprika! Smile

I smoke mine all the time. I have a smoker full of habs going right now. I also do alot of japs. I have to buy them though my garden is smallish and the habs take all the room I can give them.
