bomb'n bbq, I believe the recommended internal temp for chicken is 165° to 170°. I rely on the leg wiggle more than probing. _________________ Always remember slow and steady wins the race.

| I usually let them go to 175, I feel like it helps render a little more fat and the dark meat is still plenty moist. If I cooked a little more like the competition guys that scrape fat off the skin first, I might be a little more careful with it like I am with white meat. |

Some get a little hotter.

I am like KAM, I go to about the 170° mark. If the joint separates easily, then they are done. _________________ Gunny 3073/4044/8411

Done a few to 170° and it leaves a bit of red from blood vessels or whatever. It can make guests very squeemish to look at it thinking you're poisoning them. At 170° the meat texture is perfect, and i think would still be very satisfactory up to 175°, which I will try next time guests are over. _________________ Since Christ DIED for us, we should LIVE for Him!
