My parents celebrated their 50th anniversary this past weekend, so we roasted a whole pig for the party.

This piggy was 110 lbs from the butcher. Mrs Bud did the honors of seasoning the pig while I watched and learned.




The seasoning is a paste of Garlic, Onions, Green peppers, Tomatoes, Parsley, Cilantro, Olive Oil, and Goya Sazon with some fresh basil leaves added in for good measure.
The paste is rubbed inside and outside of the pig, and into deep slashes made in the muscle tissue. Goya Adobo was also added inside and outside.


I scabbed together a rotisserie from an old gearbox we had laying around.




A generous pile of Charcoal and off we go!




This is about 4 hours in and starting to color up nicely.




Had to protect the piggy from the rainstorm.


After about 9 hours we let him take a little rest.


And now the fun begins.

We all had a great time and I'm sure this wont be our last pig roast!

bud-wie-ser, we did the same thing a few years back for my MoM and Dad. Thats what they wanted so my brother and i made it happen.
Congrats on having cool and loving parents. There is nothing as awsome than that.

Snappin' armpits Bud-wie-ser. That porker looks fabulous. Allways wanted to do one of those guys. Hats off to Mrs. Bud for the killer lookin' cake. I'd say you two knock it outa the park.

Very nice looking pig. I much prefer them pit spit roasted. That was the way we used to do it in Serbia, except with a car battery for power. Hired the village drunk to come and get the fire going early while the rest of us slept. A few glasses of cheap rakija and he was a happy man. Smile

Sadly, dad had an outdoor wood fired oven made and it has never tasted the same again. Sad

Thanks to everyone for all of the positive comments. I have been wanting to do a pig roast for over a year now and this just seemed like the most fitting occasion to make it happen.
Mrs Bud has done pig roasts with her family when she was younger, so she insisted on doing all of the prep and seasoning.
This was a lot of work, but the smiles on my parents faces during the whole party makes it all worthwhile.

We had around 75 people show up, so the 111 lb pig gave us plenty of leftovers.

Looks great.

Is it normal to see a pigs ribs like that? I thought they were fattened up before the party. I guess I need to get out of the city one day.

Soapm, I think what you are seeing there is the folds in the fat layer.

Daddywoofdawg, She has plenty of sisters, but no twins. I guess its twin sisters from different mothers.

Good Luck on your pig roast Messerist. The only caution I would offer is make sure the tines for the front end of the hog are long enough to extend into the front shoulders. I had a bit of trouble with the front end spinning on the spit. Another option would be to add a T-bar to tie the front legs to.
