Decided to do something diffrent for tonights meal, Smoked Stuffed Meatloaf.
Mixed up some beef, Big Ron's in the House, Montreal Steak seasoning, eggs, onion, and crushed Ritz crackers and formed it into a square.
Added diced jalepeno and roasted red peppers.
Walked out side to check the temp on the small smoker.
Decided to check my comp pit that was sitting out in the yard with no fuel in it. It was supposed to be a high of 104 today with heat index of 115. The temp gauge read almost 150.
Added Bacon.
Added motzerella and sharp cheddar.
Rolled up and ready to go on the smoker. (small one is for the kids, just bacon and cheese stuffed)
Whoops forgot to put rub on them. Added Big Ron's original rub to both.
No they are on the pit smoking right now.

Guess I should have been watching my temps instead of playing around on The Smoke Ring.

Its a bad habit that we all enjoy.

I think the temp spike may have split one of my meat loaf but everything still came out wonderful. Big Ron's rubs made the meatloaf taste great, I'm going to try the chili mix next week.
Finished off the pit. Had to cut one in half to get it to fit on my tray.
Plated with green beans and mashed potatoes and gravy.
Smoke ring and stuffings.
