I have been on the road the last couple weeks so I’ve not been able to get outside and cook anything. And, I’ve got the itch real bad…..I don’t have time today to smoke anything because of several commitments. So, I’m firing up the grill!
While on vacation one day I watched a show on the Food Network not sure of the name but it was an attractive Italian lady named Giada she grilled up some pork sammies and mayo-less potato salad so that’s what I’m going to do.
First I made the potato salad to let it set up and blend flavors in the fridge while I’m grilling the pork sammies. My local grocery store did not have the baby red potatoes so I grabbed what they had and cut them up into smaller chunks.
Cut up and on the stove.
Done and resting for 5 mins
Ingredients for the potato salad minus the taters.
Cherry tomatoes cut up.
Added to the potatoes
Other ingredients added then to the fridge to meld for an hour. I didn't have fresh thyme so I used some from my spice rack.
Shucked the corn to get it ready to boil.
Some tomatoes I have lying around...love me a tomato sandwich!
Pork chops ready for the grill...drizzle some EVOO, salt and pepper to taste and then sprinkled with some herbs de Provence.
Fresh basil for the sammie sauce.
Sammie sauce finished and into the fridge.
Getting the ciabatta bread ready.
Chops on the grill.
Cut up the cheese and lettuce.
Chops resting.
Tater salad ready.
Making the sammie.
Plated with potato salad and corn.
Man, it was a meal loaded with flavor and refreshing. Will add it to the rotation. Give it a try!

Grilled Pork and Fontina Sandwiches
Serves: 4 servings
Ingredients
• 2 (8-ounce) 1-inch thick, boneless pork loin chops
• Olive oil, for drizzling
• Kosher salt and freshly ground black pepper
• 2 teaspoons herbes de Provence
• 1/2 cup mayonnaise
• 1/4 cup packed chopped fresh basil leaves
• 2 teaspoons lemon zest
• 1 teaspoon lemon juice
• 1 (1 pound) loaf ciabatta or rustic bread, ends trimmed, cut in 1/2 horizontally
• 4 romaine lettuce leaves, halved lengthwise
• 4 ounces fontina cheese, cut into (1/4-inch thick) slices
Directions
Put a grill pan over medium-high heat or preheat a gas or charcoal grill. Drizzle the pork chops on both sides with olive oil and season with salt and pepper, to taste. Sprinkle both sides with the herbs de Provence and grill for 10 minutes. Turn the chops over and cook until an instant-read thermometer inserted into the thickest part of the meat registers 160 degrees F.
Transfer the chops to a cutting board and let them rest for 10 minutes.
Slice each chop into 6 (1/4-inch thick) slices.
In a small bowl, combine the mayonnaise, basil, lemon zest, and lemon juice until smooth. Season with salt and pepper, to taste.
To assemble the sandwiches: Lay the bottom half of the bread on a work surface and spread with 1/2 of the mayonnaise mixture. Add the lettuce leaves, arrange the cheese slices on the lettuce and top with the pork slices. Spread the top half of the bread with the remaining mayonnaise mixture and cover the sandwiches. Slice the loaf into 4 pieces and serve.
Red Potato and Tomato Salad
Serves: 4 servings
Ingredients
• 1 pound baby red potatoes, halved
• 1 pint (2 cups) cherry tomatoes, halved
• 3 scallions, thinly sliced
• 1/3 cup pitted black olives, halved
• 1/3 cup chopped fresh flat-leaf parsley
• 2 tablespoons capers, rinsed and drained
• 1 tablespoon chopped fresh thyme leaves
• 1/4 cup extra-virgin olive oil
• 1 large lemon, zested
• Kosher salt and freshly ground black pepper
Directions
Add the potatoes to a medium saucepan with enough cold water to cover by at least 2 inches. Set the saucepan over medium heat. Bring the water to a boil and continue boiling until the potatoes are tender, about 15 to 20 minutes. Drain the potatoes in a colander and allow them to dry for 5 minutes.
In a serving bowl, add the potatoes, tomatoes, scallions, olives, parsley, capers, thyme, olive oil, and lemon zest. Toss gently until all the ingredients are coated and season with salt and pepper, to taste. Refrigerate for 1 hour and gently toss again before serving.

I don't know you well enough to comment on the first question, on the second part of the question, the mayo-less salad, is a salad without mayo, but the pork sauce included mayo, even though the salad didn't include the mayo.  _________________ Here's a change Robert.

Looks great jeepdad. I love tater salad. I hate mayo. Perfect recipe for me. I usually just substitute sour cream and mustard. Thanks for sharing. _________________ Gotta love those tasty carcinogens. |
