Hey all.
I took the wife out last night for a birthday dinner and had this great meal of pork chops with a smoked potato puree. It was fantastic, so now I have to do it at home.
I think the chef used cedar to smoke the potatoes.
Can anybody advise me on the pitfalls I should watch for when smoking a potato?

Ya, if that cook used cedar to smoke anything he is an idiot.  |
