Haven't gotten my oil tank smoker up to par yet so having to use my Brinkman smoker.
What kind of time using the Brinkman smoker would be accurate on a 3.25 lb. pork loin?

I find loin being lean tends to cook quicker than butts do, at 250 on the grate loin is often done in the 2 - 3 hour mark on my UDS, if your temperature is lower or you are using a water pan it might take an hour more. _________________ Here's a change Robert.
