Way to hijack a thread guys....This fellow is from Rockwall, Texas. There is exactly one (1) KCBS competition in Texas. While it is in the Dallas area it's still only one, so any conversation of KCBS is simply hijacking this thread and is a moot point!
So, in answer to your question Worchard. IBCA is your organization by default. Unless your willing to travel to OK or AK. You might see a few LSBS events up your way and maybe CTBA event if you go a bit south. Go to the "Texas BBQ Forum" and ask one of those fellows if you can visit and observe them at a cookoff or two or perhaps do some grunt work for them to pick up some fine points of the Texas competition. I know they regularly have new cookers visit to learn and lots of those guys are from N. Texas. If you want to drive down to West this weekend to the All Star Shootout, I'd be happy to talk with you about improving your comp BBQ. I'll be there all day Saturday in the KOA camp ground next to event which is to be held at the K of C in West, Texas. Let me know and I'll give you specifics. _________________ Zilla

I guess it doesn't matter KCBS, IBCA, ABC, 123 it comes down to fellow competitors helping each other out. I have only been to a couple of cook-offs as a spectator and those guys I meet there were open to discuss ideas. Hopefully that will be a continued tradition because if not, the top 10 will always be there and the rest will struggle and quit. _________________ Backyard Bomber MJH

http://www.kcbs.us/ is a good place to start. Classes is one of the first choices at the top. Judging Classes appears right away. You can click Cooking Classes on the left side to get to that.
I looked at August and found a cooking class for $225 which I understand is about average. _________________ 22" Weber Smokey Mountain + Weber Spirit |

I seen the cooking classes so those would be a good start I think....
Should a person ever take a judging class even if they never plan on judging?? |

A judging class can be a good method of finding out what sort of deal your food goes through, and may give you some clues as to what is looked for.
The other thing a judging class helps with is expenses... if you don't have the money to compete at every single contest that you can easily drive to, you can always go judge a few.
If you actually do judge, you will get a much stronger idea of what does get tuned in for real at contests, and you'll be able to see what works and what doesn't work. _________________ Here's a change Robert.

A perfect example of why cooks should take a class happened this past weekend at an IBCA contest in Prescott, AZ. Smoked To The Bone took home GC with 3 first place calls. Some team named Slap Yo Daddy took a very distant RGC.
Now, guess who's class Smoked To The Bone took one week prior? The instructors name rhymes with Cherry Moo. _________________ VRM Pit Crew |
