I finally got my UDS (90%) finished, so I pulled out a chuck roast a few days ago to take it for a test run.

I'm loving the UDS so far! Holds temp nice & steady. It is going to get a good workout this summer! Very Happy

Here it is at about 3hrs. Its is 145-150 internal. I have been keeping the UDS temp around 250ish.



I decided to double foil it at 150 internal, put it back on for a few minutes, then take it off to rest for 30 min. or so.

One of my favorite things to smoke is a chuck roast.
I usually get boneless but after seeing yours I'm going
to get a bone-in. It looks delicious. Very Happy

I sure do!

Originally I was going to pull it, but it didn't want to be pulled. So I sliced & chopped it. Holy cow ( Smile ) was it tasty!!!

I pulled it off about 6:30pm & let it rest a good half hour.

Mmm!!!

I read several times that the rule of thumb was to have at least 24" from the bottom of the charcoal basket to the first cooking grate. I got mine pretty close to that. Eventually when I find a kettle lid for it I can put another cooking grate above the current one & double my capacity.

I might even play around with a heat diffuser just to see what it does.

Actually, I guess it isn't so low as I first thought, considering the flat lid, but it almost seems you could fit a whole turkey in there. Perhaps another row of bolts close to the top to give option for for thinner meat?

How far from grate to actual coals? Seems like about a foot? How tall is your basket?

But the end result of taste is what truly counts, regardless of setup.

From the cooking grate to the bottom of the charcoal basket is 24" exactly. The basket itself is 13.5" x 15" & almost 10" deep. I didn't need it that deep, but the expanded metal was scrap at work & I was getting paid while I built it. Very Happy It might be a little big, but it works good.

As far as grate to actual coals? I did a five hour+ cook & had 2 or three layers of briquette's in the bottom. So actual coals to grate was probably 20ish?

edit: Also from the current cooking grate to the lid is 7.5", so I could probably add a second grate for ABT's & still get the drum lid on. Smile

If you want it to "pull" you'll need to be above 190 - 195, I've never had any luck below that sort of temperature to be able to pull them. Wink

I cooked a chuck till 180 but it wasn't pullable. Does taking it to 190-195 break the fibers down further? It doesn't dry it out?
