Smoked some chicken wings today... dry rubbed with jerk seasoning the night before, and smoked at 250-275F on my Weber kettle for a couple of hours, with occasional spritzing using apple juice to stop the skin drying out. They taste great! really smoky flavour from the hickory (much smokier than I expected), and the meat is so moist & tender. That's lunch done. Got some ribs going now for this evening Smile

Lovely weather... well, let's be honest... for England it's exceptional weather! (about 85F!)


Smoking temperature nicely stabilised for cooking the ribs...


Ribs getting close, 4 hours in the Weber so far, another half hour to go...


Inquisitive pigeon wondering what all the lovely aromas are... he's not getting too close because he knows he'd be very tasty smoked...
