I am doing a pig roast on the third. We have a farm and are going to slaughter the pig ourselves. if I slaughter the pig the day of I will not have to put it on ice over night and there will be a lot less messing around and things to clean up. I am worried about rigger effecting the meat. I could do it today. any thoughts? thanks brett

How big is the pig? Talking about slaughter the day of, what time are you planning to eat, cooking method/time. I'm doing mine racer style and starting the day before for noon service. You might be better off slaughtering early for those reasons. JM2C, good luck on your cook.
