Just finished a four day music festival here and at the same time we had a team go do the local rodeo on friday and Saturday night. Very successful 4 days. I am not good at the pics. I get to busy and forget to take pics. Very very hot and humid. This is my 4th year and we were down a little this year but not much. Good crowd but the weren't spending money on food. Some of the other traditional vendors didn't fare to well. On to next weeks festival at The West Virginia Arts and Crafts festival. Don't know what to expect. They average crowds around 17K. Wish me luck.

I have a rock fest coming up next week a 4 dayer,how much meat did you go though?

For the two events I went through 5 cases of butts with a little left over, couple of freezer bags. 1 gal.

I have a 3 day event this week and i have. I have ordered:

6 cases of butts
1 case shoulder cload
3 cases of ribs
100 smoked sausage

This is for a crowd of 17k for the 3 days.

How did Arts and Crafts go? I tried to get in it a few years ago but BackYard BBQ had it, I heard he moved to Mt.Pleasent SC. Glad you got it. I may still try to put my Pretzel trailer in it next year, depends on what comes up.

Did not go as well as expected. They said the crowd was down about 40%. Based on what I did at a 100% crowd I would have had a great week. Even with two BBQ trailers. I had a lot of excellent comments on our food and our Blueberry BBQ Sauce was an other great hit. So you do ribs? I have about decided to stop fooling with them. Just not enough sales for the trouble. I may cut back to pork beef and sausages. How did Blues and BBQ go?

Who was the other BBQer? Did the guy that bought Back Yard do it?
Blues brews an BBQ was down they added several new vendors used to be 2-BBQ vendors now there are about 6... Same way with multi-fest once there were 13 vendors an 2 BBQ. Attendance is down an the doubled the vendors and there was at last count 7-8 BBQ...... A few of theFestivals are adding way too many vendors

I too have decided to cut back on Ribs, I'll have them as an option but not cooking nearly as many as I would in the past. They are just too much work for too little return. Interested to see what everyone else thinks.

Yes Back Yard was there but we were on opposite ends of the festival.

Oh by the way on the rib question. I do them at some events an not others. I don't like to vend them either but some places they do ok. I sell smoked turkey breast as well , and its almost as big a pain to hold as ribs, but there are places that if I pulled it from the menu,they would run me out of town on a rail.

Jim I noticed at Cherry River you use two people to run the trailer. Do you use two for most of your events? Do you prepare in advance and warm up or do you cook everything on site?

Depends, we do both. Cherry is a low volume show. We usually use 3-4 peopel. That one of the few places that we just us 2. Most of the time we bring the 108 with us an take turns on cooking detail so everyone is fresh. At cherry we can cook enough butts overnight on the little offset to get us thru the day. I keep a few bags of pork in the freezer and blend with fresh if we get low. If we don't have the lang with us we don't do ribs .
