I normally use mustard, but I guess olive oil would work. Are you thinking of using the olive oil as a base and then add your rub? I coat my yardbird pieces with olive oil prior to coating with spices. _________________ Good Food, Good Drinks, Good Laughs

TallySmoke, EVOO works very well instead of mustard. I use either one and cannot tell any real difference in the end result. _________________ Always remember slow and steady wins the race.

I was going to use it as a base to help keep it moist, and to help the rub stick. Wanted to see if anyone else had any experience with this. _________________ Master Forge Smoker |

| Many people say that most of the rub spices are oil soluble, not water soluble, and so evoo helps to get the flavor in. Not sure if it's true or not. Like KAM I'm not sure I can tell the difference. |

Hey T.S. I was told that some of the spices in rub will dissolve faster in oil than water( ie mustard). Don't know if its true or not, but I allways use EEVO. It's good stuff. _________________ Pork fat rules baby. Emeril Lagasse

Don't be misled into thinking olive oil will help keep the butt moist. It's gonna stay moist regardless. I also don't agree with people who use olive oil on a grilled steak for the same reason. A steak doesn't need oil either.
Do some spices disolve faster in oil vs. water? I guess they do, but why does this matter when cooking bbq? You've got a 10+ hour cook ahead of you...is speed really important? LOL Another thing to not be misled about is that your spices will penetrate into the meat. It doesn't...it can't. The only way to do that is with a brine.
Do what makes you happy...it's your bbq. Don't worry about what I or anyone else has to say. Have fun with the cook! _________________ Somewhere in Kenya...a village is missing their idiot. |

| EVOO will work just fine, i use to rub all my butts with that, but i prefer the bark you get with mustard. I also use EVOO when i rub my briskets and they turn out just fine |

I only use evoo for one purpose,and that is to help hold my rub on,I prefere this over mustard.Butts come with enough fat,so keeping them moist is not a problem. _________________ Horizon Offset (Marshall RD Special)
