I was jonesing for some ribs to eat while watching a ball game tonight, so I picked up a rack of spares yesterday and got 'em prepped in the evening. Planned on whipping up some corn bread and fresh salad to go along.

All rubbed up and somewhere to go!


Today at High Noon the rack hits the smoker. I decided to forgo my usual Apple wood base, and use a 50/50 mix of Wild Cherry and Alder this time.


The humble ECB reaches cruising temp with nice smoke showing.


Almost done! Cranked up the fire and caramelized some sauce.


Rather muted ring this time, might be related to the wood I used.


Swanson's got nothing on me! Wink I love the pieces with the most bark! Yum!
