BigPhil32, congrats on your job with the Baseball team I know you enjoy broadcasting. Your cook is off the charts spectacular what a feast. You nailed the pigs I love those young wild pigs. And those Butts and brisket look fantastic. Cooking three different styles on a borrowed cooker is a challenge and you my Friend did an outstanding job. Nicely done my man. _________________ Always remember slow and steady wins the race.

@ tarrbq - Is Eddie still around? I used to work for the Lewisville Area Chamber of Commerce for 8 years and you guys were a member with us...small world! I have not been in town for the 4th event, but we will be in town this year, so I WILL drop by!
@ BluzQue - Thank you! I was very pleased with the end results...
@ Uncle John - Thank you as well. Yes, the smoker was quite easy to run...and it was fun as well!
@ Dr Obvious - Thank you. I got the pigs the way you see them, so I have no clue what was done with the heads or the feet.
@ joshsheff1 - Thank you...it was a great cook! The biggest pig weighed about 35 pounds, and the two other ones were about 25-30 pounds. Good eats!!!
@ Big Bears BBQ - Thank you!!!
@ k.a.m. - Thank you for the nice words. I do love broadcasting, but I am about to enter a stretch where I will announce 29 games in 31 days!!! I miss being able to spend some time on here. I was very pleased with the cook, and I was especially happy with the pigs. Havingg never done any type of pig before, I was nervous, but they came out damn good. And the tast was SOOOOOOO good! I owe it all to people like you who have been nice enough to help me out since day one. I still remember last Thanksgiving like it was yesterday, and I can't thank you enough for walking me through my first turkey. I hope to have a kick ass smoker like the one you just built...one day...hopefully!!!
@ eastcoaster - Thank you for the nice words!!! They weighed between 25-35 pounds and I got them from a locl man who has a lease in Sweetwater. I actually did him a favor!!! I know what you mean about crispy ABT's, but some people wanted them "less" cripsy, so I aim to please!!! _________________ 1 homemade UDS smoker
