Okay, so I haven't been on here in quite awhile because I was hired by the Texs Collegiate League to do play by play for two of their baseball teams! So, since June 1st I have been braodcasting games almost evey night. Over the course of 70 nights, we will broadcast 57 games!!! Needless to say, I don't have a lot of spare time right now as my full time job keeps me plenty busy and then I usually have a game to call each night. But, the money is GREAT and I will be done in mid August. So, the smoker has only been fired up twice since then...

But, on June the 15th my office had an event for our Ambassadors. we have a luncheon for them every month where they pay $12 to meet at our office, visit with each other and they get to listen to a keynote speaker as well. I wanted to do something different for them this month, so we had a smoke out! A member of ours who is a caterer let me borrow her smoker, and I fired it up at 5:00 a.m. I have never cooked on a big smoker before, so I was a bit worried, but everything came out perfect! I smoked three little wild hogs, three pork shoulders (in case the hogs sucked), a 12 pound brisket, 5 whole chickens and about 200 ABT's. We also made some beans, had potato salad, a green salad, some fruit and cookies. All in all it was a huge hit, and this was the biggest group I have smoked for so far. About 80 people attended and they all raved about the hogs, which I got for FREE!!! Sorry for the lengthly post, but you can believe how happy I was with the end result, and it is all because of ALL OF YOU ON THIS SITE who have helped me out since November of last year. This is BY FAR the best BBQ site around, and I thank ALL of you for being so nice and helpful. On with the proof it happended!!! Laughing Laughing Laughing

The smoker...I was worried about running it, but I did just fine...and I was worried about the little hogs, as I have never done any whole hogs before, regardless of size.

I got to take one home...I figured I got them donated so I should be able to take home the leftovers!!! Laughing Laughing Laughing








Most of the people said it was the best pig they have ever had, and they could not believe they were wild hogs. What I found out from the guy I got the hogs from was that bleeding them out as much as you can is really key in removing the bitter, gamey taste of the hogs. It was a four day process bleeding them out, and the end result was spot on! I can't wait to do a BIG pig one day, but until then, these will work out just fine, especially since I can get them for free!!

Thanks for looking and I miss you guys and miss smoking as well, but the money will go to a good cause (paying off some bills!). BigPhil gone...

The only thing wrong with this post is that I get too friggn hungry by the time I'm halfway through. I have to get up and go smoke something!

Big Phil, number 32, steps up to the plate. This is his first time facing this big Texas pitcher, ol' Smokey, and he looks a little nervous.

Smokey winds and delivers and Phil takes the first pitch for a strike. 230 on the gun! Smokey's throwin some real heat out there.

The next pitch is a curve ball over for strike 2. Smokey had Phil guessing on that one but he looks determined to dial it in.

Smokey sets and delivers another blazing fastball. Phil swings and connects. It looks like he got all of that one. It's heading out to the Ambassador seating area in straight away center field. Back, back, back it's a home run!!!!

And the crowd... goes... wild...

That looks pretty great.

I'm going to avoid the well hung meat pun and just say... yeah, I've had wild hog that was well hung and some that wasn't, and the hung meat was much better.

What did you end up doing with the heads? There's lots of good stuff you can make with the head.
