Thanks for the compliments guys. Always nice to hear from people that are considered experts in the field! I'll be away from the build for the next few days. I know it sounds crazy but we're headed to Del Rio Texas tomorrow for the long weekend. I know I know,,,hurricane and all but the money has already been paid for the lake house and all our friends live within two hours of there anyway so we're loading up and leaving out!!! I'll be back Monday evening ready to get this guy smoking. I have to be able to cook on it by Thursday!! Nothing like cutting it close.

watchado, have a safe trip. Very Happy If you go through Bracketville stop at the little corner restaurant there the name is the crazy chicken and get a breakfast taco I recommend the Jackson its a little bit of everything and huge. They also have the best dip sauce I have had at a restaurant. It has been years since have been there but it was a great place to eat. Smile

Well after several days off finally got back on the build this afternoon, after all I do have to cook on it this Friday! I got the firebox doors on and a few small odd and ends then went looking for something for the smoke stack. I have not been able to find any 5 inch but was determined I would test fire today. I found some 3" ID and decided to go with it knowing that I can always cut it out and go larger (which I"m sure I'll do soon as I find what I'm looking for) anyway, pushed her out in the yard and got the last of the lump I had in the garage, about that time the misses came out and said she would run down to the neighbors and see if he had a few sticks of wood. She was back soon and I threw a couple sticks in and it began to down poor. I sat under the patio and watched her smoke for 2 1/2 hours while it rained well over 2 inches. Was not able to get a pic of anything but the smoker working in the rain. Was able to finally get out there with a digital about 9:30 and she was sitting on 205 with very little fuel. By George I think she's gonna cook!!! Wash out tomorrow then fire up again and season, 7 briskets going on first thing Friday morning. O and by the way they are calling for 4 to 8 more inches of rain here in the next 2 days. ALEX go away!!!

that is a good looking rig.
It looks like you have some kind of coating on the smoker. Wondering what it is or is it just paint and the rain makes it look that way.

Ha! No that's just rain and rust but it does look shiny. Got some odds and ends finished up and starting seasoning this afternoon. Holding about 20 degrees difference from one side to the other but I have one old gauge and one new one and they are the cheap O's from Academy. The older one is turning so I'm sure it's not accurate. I'll double check with the digital tomorrow during the cook. Slide the air intake about 1/4 and you get about a 10 degree rise or fall according to what your looking for. Seems it might do what I was looking for! Here's the pics and I'll get some up cooking tomorrow.

Whatchado looks great. I'm hoping to get started on mine as soon as I get caught up with some other stuff. I have a 24X69 cook chamber and a 20X48 firbox which I'm gonna cut down to 36". Is your fire box 20 inches in diameter, looks a little smaller than 20? Keep us posted on how she cooks.

It's 16" by 35". Seems to work pretty well for this cooker.

Well after a few weeks off for family reunion, our youngest turning 21, his and her's colonoscopy's and a few trips to the lake I'm back at it again. Been tinkering with a few small details that I won't go in to. Started the wood rack underneath and got it finished today. Starting on the fold down shelf tomorrow. Here's a few pics. I'm sure ready to see this thing in paint!!!

Cooked a little chicken yesterday for a friends 50th Birthday. Started fire with about 6 logs, let that burn down to coals and the temp settled in around 250. Put the chicken on and maintained temp with two 3 inch size logs per hour. Done in 3 hours, juicy with a nice bite through skin. Everyone raved!!


An hour and a half in.


Three hours, done.

Finally got back to it today. Had a little break from the brutal heat we've endured the last couple weeks so thought I'd get a little more done. Built the fold down shelf on the back. Still tinkering with a few ideas so it's not completely finished. Also got a little surprise rain shower right in the middle so got cooled off for a few minutes also. Here's the pics.

watchado awesome cooker after seeing how you mounted your door hinges to the top strap I had to cut mine off and copy yours and I must say it is a much cleaner finished look and it works really nice to a real win, win!

PS: great looking yard birds on the smoker.

Just wanted to update a little topic that has shown some interest. The way I mounted my door hinges with the top of the door being under the strap has proven to be water tight. Smoker was outside last night and we had a very heavy thunderstorm move through here. There was no leakage anywhere around the doors. Had maybe a half of cup of water inside the tank which came through the smoke stacks since I didn't have them covered.
