Hey folks! Hope everyone is pumping out the thin blue today. It's raining here in Washington and I have 5 lbs of Jerky on the smoker.

I was playing around with a new recipe and had great results yesterday. I have been wanting to do something with Tiger sauce ever since I saw Johnny Trigg using it when he foiled his ribs.

I decide on a cook that would be fairly easy and quick. Who doesn't like party wings? So wings it was. I mopped them with real melted butter. Seasoned them with, garlic powder, McCormick's vegetable seasoning, brown sugar and a new rub I found. Louisiana Grills Caribbean Key lime Rub to be exact. Doesn't have a prominent Key lime flavor but its a very tasty rub.

On the Treager I set it for smoke for 1.5 hours then to 225 degrees. I flipped them and mopped them with tiger sauce. After another hour I flipped them again and gave them another mopping. @ 160 they got yet another mopping and I pulled them at 175.

I was amazed at the flavor. This is how I do wings from this point forward. That until i get board and try something new. Regardless this is one I will be doing for some time. Slightly sweet, tangy and spicy. non of any of these attributes are over powering.

Looks good. Wings are one of my favorite things to smoke and try different sauces.

Forgive my ignorance, but how did you monitor the internal temp of wings? there isn't any thick part of the meat to insert a therm....

I have a hand held digital therm I stick in the thiickest part of the drummet. That said I make sure they get at least 175 some could be higher. I don't check them all as there are too many to deal with. I sampple a few and be done with it.
