Mrs Jeepdad teaches at a local high school and several of her coworkers are rotating to other parts of the country. So, we are having a farewell dinner here this evening for them. Should be 18-20 folks in all. Will be smoking a brisket tomorrow!
Put a couple butts on this morning. Toot keeping an eye on me to keep me straight!
Toot Toot my four year old took this picture.
Made some six hour smoked beans.
About four or five hours in.
Toot kicking back with her new blue flops.
Scored this on CL for FREE! The kiddos are happy to say the least. This thing is a monster!
Will keep you posted.

Looking good there Dan, looking real good. Glad to see somebody up there is keeping an eye on you
One more thing, what's up with all that pretty green background? No more frozen tundra? Just all a bad memory by now, huh? _________________ Propane is for frying, not Que!

Seven hour mark and she is still dialed in!
The butts are in a cooler for a few hours the beans are left to smoke a little more. Time to clean the grates after this weekend! |

Sure..these beans rock. I found this recipe here on the Ring somewhere its from Jim Minion. I have made these a dozen or more times and folks love'em...they take six hours to smoke and well worth it. I add rib trimmings, brisket, pulled pork, whatever I happen to have at the time...or no meat at all. They are great leftover too....and add boatloads of hot sauce!

Dang Good Smoked Beans
Ingredients
2 Cans of Bush's Original Baked Beans - undrained
2 large yellow onions - chopped
2/3 cup BBQ sauce (any brand will do)
1 entire yellow bell pepper - diced
1 entire red bell pepper - diced
1/3 cup syrup - either maple or cane
1/3 cup molasses
1/3 cup dark brown sugar
3 tsp dry mustard
1-1/2 cups BBQ pulled pork (or rib tips, brisket whatever you have)
1/4 tsp ground black pepper
1/4 tsp Chimayo chili pepper (or whatever you have or leave it out)
1/4 lb uncooked bacon slices - cut in quarters (After 3 hours, add the bacon slices to the top of the mixture.)
3 tsp Texas Pete Hot Sauce
1 shot Tabasco Sauce
I just went out to stir them...man do they smell great! When you smoke them if you can have them sitting under ribs or butts...all that good juice cooking into the bean...man o man!

Thanks All! It's been a long day and I'm getting up at 3:30 to smoke a brisket. I'm dragging.
I didn't get many pics as I was doing a dozen things when folks started rolling in. It was a good night...on to tomorrows cook!

Everything looks great. I do think you are missing either chopped up apples or peaches in the beans. _________________ Joe D.

Thanks Joe.
Got up at 3:30 this morning to throw a brisket on the smoker.
Slathered in mustard and Billy Bones Beef Master rub. I rubbed it down yesterday and wrapped it and put it in the fridge overnight. Then took it out this morning and added the slather and more rub.

Dan,
You like the Beefmaster? Remember you got it for the chili way back when. Have you used it since? _________________ Joe D.

Yes, I like it and the Buck Snort I got as well. I use the Beef Master on brisket primarily and add it to chili. Love it!

Thanks Guys. It has been a nice day. After putting the brisket on the smoker at 4 am I hit the rack and when I checked it at around 8 am the temp was higher than what I wanted. So, everyone said the brisket was great. it was tender and juicy but to me it was just a little to done. It all got eaten though!
The spread....to include pulled pork from yesterday, corn, mashed taters, slaw, smoked beans and other stuff.
I put way to much mustard slather on the brisket but luckly there wasn't a mustard taste.
All in all a great weekend. Now time to hit the deck with a cold beverage and cigar and kick back. Hope all is well with you Ringers.
