Doing a IBP Choice brisket tomorrow night. Here are some prep pictures.







Used a combination of Billy Bones Beefmaster and Texas BBQ Rub's Brisket Rub.




Generously Applied



Then wrapped to sit in the refer until I get home from work tommorow.

Sweet - good looking hunk o' beef. Looking forward to the results!

I'll be cooking two briskets on Saturday - one fresh, one's been in the deep freeze for a few months. Interested to see if I can tell the difference. They're bathing in the Dr. Pepper Bath of BBQ Goodness now (started them there last night) and will move from there to the rub down tomorrow night. I'll be playing with fire Saturday around 4:30 a.m. to make sure they get done in plenty of time for a good rest before 7:00 feeding Saturday night. Post and pics to come Sat...

Fired up the Stumps about 45 minutes ago and she is hovering at 250. Will be pulling the brisket from the frig in a few minutes to touch up the rub and throw it on. Will have a few more pics in about 30 minutes. Smile

Add more rub and some black pepper.



Out to the cooker.



Throw it on



If they wife wasn't in MD visiting with our granddaughter I would have had her take the next picture with me floating on a air matress, just to the right of the far ladder... Wink Very Happy

I may have to jump in soon. Just checked the temp out back and it already 90 and it's only 9 am. Shocked Humidity is about 10000% Rolling Eyes Shocked

Just pulled the brisket off. Surprised Temp 194.2. Almost falling apart. Razz



Will let her rest for 2-3 hours. Then you will get the final pictures. Cool
